Katie began working at UNC Asheville in 2014 in the Health Sciences Department (formerly the Health and Wellness Department). She currently shares her time with Health Sciences and the NC Center for Health and Wellness (NCCHW). Her work with Health Sciences includes administrative support, fiscal tracking, and co-managing the Teaching Kitchen. Her work with the NCCHW includes administrative and operations support for staff, fiscal tracking, and supporting initiatives to engage with students and campus resources. In recent years, she has provided support for campus student-led programs such as the Student Health Ambassadors and the Food Equity Initiative. 

Her previous experience includes providing customer service and administrative support for natural products companies. She has also worked at and volunteered for the National Park Service, helped to maintain a small Community Supported Agriculture (CSA) farm and market, and served as an art teacher in after-school programs. She is enthusiastic about community-based food systems and food access and has been co-leading the steering committee and volunteering with the Woodfin Community Garden since 2022.

Katie earned a BFA degree from the University of South Florida in Tampa where she studied photography, printmaking, and ceramics, and a MFA degree from the University of Washington in Seattle. She has completed the Fundamentals of Herbalism course at the Appalachia School of Holistic Herbalism (ASHH) and the Regenerative Backyard Blueprint permaculture design course with Shades of Green Permaculture. She is currently working on earning a Certificate in Horticulture Science from NC State University and completing the Chestnut School of Herbal Medicine Herbal Immersion course.

As often as possible, Katie enjoys getting out in the forest to hike and explore the diverse plant world of the southern Appalachians. She also enjoys gardening, baking, yoga, sewing, drawing, and learning about urban homesteading.
