Safety Tip
Before you start cooking Thanksgiving dinner, be sure that you have an important but necessary tool: an accurate thermometer. Sometimes inexperienced chefs do not thaw the turkey before cooking. Unthawed turkey cooks faster on the outside, often leaving harmful bacteria inside. A 20-pound turkey, for example, should thaw for a minimum of two days in a refrigerator at a maximum of 40º F.

Energy Tip
Consider a pressure cooker for some cooking chores. Pressure cookers reduce cooking times and save energy.

Updates for state employees from the N.C. Office of State Personnel are available online.
