Lunch Time Meet and Greet—Planning for Shared Meal

All students enrolled in Food for Thought cluster courses in the Fall 2008 semester will gather to meet one another and learn about Fall 2008 cluster activities, the Harvest Bounty Shared Meal and the UNCA Dietary Guidelines Project.

Local Farm Tour of Coston Farms and Apple House, Hendersonville, NC

Depart UNCA at 9:00 am for 10:00 am – 11:30 am tour

(Participants meet at the bulldog in front of the Justice Center by 9:00 am)

Harvest Bounty Shared Meal

5:00-8:00 pm, Alumni Hall (1st floor Highsmith Union)

All students enrolled in Food for Thought cluster courses in the Fall 2008 semester will plan, prepare, eat and enjoy a meal together.  Aspects of the dinner planning, ending evaluation and assignments will focus on the social, scientific, economic, and nutritional aspects of a student-prepared meal.

Students from HWP 373 (Food Politics and Nutrition Policy) are developing dietary guidelines for UNCA, with specialized information developed by students Food for Thought cluster courses.  This event allows for time-overlap between students in these courses.

Lunch and Learn:  Focus the Nation – Taking a Bite out of Climate Change:  Your Plate and the Planet

A teach-in moderated by UNCA junior biology major Ellie Johnston will involve a panel discussion by UNCA professors Shirley Browning, Amy Lanou and Sally Wasileski on the implications that climate change will have on global food supplies.

Tour of Blue Ridge Food Ventures - INFORMATION SHEET

2:45 pm (Meet at the parking lot across from Zageir Hall beside the parking deck)

Blue Ridge Food Ventures is a 11,000 square foot food processing plant with experienced professionals in Western North Carolina that helps local farmers and food entrepreneurs process foods such as jams, fruit butters, salsas, spice mixes, and apple cider.

Promoting Food for Thought: a Community Education Project for the North Asheville Tailgate Market and UNCAÕs Undergraduate Research Symposium Poster Sessions

Student teams from Spring 2008 cluster courses will present educational displays for the local North Asheville Tailgate Market community on plants, food and nutrition about local fruits and vegetables and on food labels and health promotion.

Main Dishes:  Roasted Hickory Nut Gap Pork Loin with Apples (meat dish, all local) and Polenta with Ratatouille (wheat-free, dairy-free dish, all organic).  Each table will receive a plate of pork and polenta for their meal – please bring 2 extra serving dishes.
